Put on your Baseball cap tonight! We are staying in for dinner!!!!


  • I wanted to share one of my favorite recipes, I often make this for my family & friends.

    • 4 red peppers

    • 1 1/2 pounds lean ground beef ( bison, turkey, or beef)

    • 1 cup chopped onion

    • 1 teaspoon of fresh garlic

    • 1 cup cooked rice or quinoa

    • 2 teaspoons mint

    • 1 packet of Italian seasoning

    • 1 teaspoon oregano

    • 1/2 teaspoon salt

    • 1/4 teaspoon pepper

    • 2 cans (15 ounces each) tomato sauce, divided

    • 1/2 cup shredded mozzarella cheese or feta (we like the feta)

    • Cook the meat in a large pan, garlic, onion, and seasoning. I then start to boil the rice. After your rice is finished add the sauce and meat. It’s time to stuff your peppers! You can refrigerate them for later or cook at 350 for 50 min.

    • A few tips shred carrots, peppers, and rice cauliflower ( your kids will never notice the extra veggies are in the sauce)

    • If you don’t have a lot of time and like softer peppers boil the peppers for 20 min before you stuff them. Leave me a comment and let me know how you liked it!
